Lactic acid bacteria is one of the oldest forms of biopreservation practiced by mankind. One important attribute of many LAB is their ability to produce antimicrobial compounds called bacteriocins.In recent years interest in these compounds has grown substantially due to their potential usefulness as natural substitute for chemical food preservatives in the production of foods with enhanced shelf life. the ability to produce and store large quantities of food is the single most important development permitting the formation of civilization. the dairy industry is in the genetic modification of lactic acid bacteria and it is commonly used as starter cultures in production of fermented dairy product.
